Fried Papaya is an old vintage recipe of the kampong Malay, an easy to make dish. No excessive additional spicing. A green natural recipe with ingredients easily available near and around the house of a Malay folk in the kampong. Papaya is one of the better source of natural Vitamin C, so it is advisable not to overcook. A crispy raw taste of papaya well infuse with the invigorating natural essence of lemon grass. This dish is normally prepared during small congregation by the kampong folk, especially during the pre-wedding reception where all close relatives and neighbors are around to give a helping hand before the actual wedding event took place. This dish normally serve together with " nasi pulut" or the glutinous rice.

- 1 Medium Size Papaya ( near ripen papaya fruit)
- 3 Stems of Lemon Grass
- 10 Chilly Padi
- 1" Fresh Turmeric
- Salt to taste
- 1 piece of Dried Asam Gelugor
- 1 Tbsp of Cooking Oil
- 1 Biji Betik Saiz Sederhana (yg hampir ranum)
- 3 Batang Serai
- 10 biji chili padi
- 1" Kunyit Segar
- Garam Secukup Rasa
- 1 Keping Asam Gelugor
- 1 Sudu Besar Minyak Masak
Preparation of Ingredients / Penyediaan Bahan2

- To De-seed Papaya and cut into a fine strip later soak it in a water with a bit of salt.
- Crush slightly the lemon grass stems
- Chili padi,turmeric and salt to grind until fine
Malay
- Buang biji2 papaya dihiris halus memanjang kemudian direndam sebentar dalam air garam.
- Pecah dan tumbuh batang serai, jangan sampai hancur
- Cili padi, kunyit dan garam dikisar atau ditumbuk halus.
How to Cook? / Bagaimana dimasak?

- In a wok or cooking pan, add in the cooking vegetable oil.
- Add in all the grind ed ingredient and stir mix well for 2-3 minutes
- Add in the fine strip/cut papaya and stir fry for about 7-10 minutes, then put in the Asam Gelugor
- Let's it simmer for another 2-3 minutes at a lower heat
- Now ready to serve.
Malay
- Masukan minyak masak kedalam periuk atau kuali.
- Masukan semua bahan yang dikisar atau ditumbuk dan gaul rata selama 2-3 minit.
- Masukan hirisan halus buah betik dan kacau rata sehingga air kering sedikit selama 7-10 minit,kemudian masukan asam keping gelugor.
- Biarkan mendidih sebentar 2-3 minit diparas api rendah.
- Boleh lah dihidangkan.

Nota;
Goreng betik adalah resipi tradisi orang-orang melayu dikampong. Resipi yang terlalu mudah untuk dimasak. Tiada mengunakan bahan rempah ratus malah semua bahan2 boleh didapati berdekatan atau disekeliling rumah dikampong-kampong. Buah betik adalah sumber utama Vitamin C, jadi digalakan memasaknya dengan api yang sederhana dan tidak terlalu masak sehingga lembik hirisan betik. Rasa dan aroma dari masakan ini amatlah berlainan sekali, rasa betik yang kemanisan di adun aroma serai yang membuat kecur air liur. Selalu disediakan bila ada kenduri kendara dikampong, terutamanya sebelum hari kenduri besar dilangsungkan, seperti kenduri kahwin, dimana saudara-mara dan jiran tetangga berkumpul bersama. Goreng betik selalunya disajikan dengan "pulut" baik pulut putih atau pulut kuning".
I had never thought we could cook papaya... Have heard of pineapple or cucumber dish, but papaya...? Must try this to testify it myself.
