DUCK EGG & GELUGOR SHOOT IN COCO GRAVY/MASAKLEMAK TELUR ITIK DAUN GELUGOR

Ingredient / Bahan2

6 Fresh Grade A Duck Egg
6 Biji Telur Itik Segar – Grade A
1 Bundle of Fresh Gelugor Shoot (200gm) 
1 Ikat Pucuk Gelugor Segar (200gm)
1” Fresh Turmeric
1” Kunyit Segar
20 Kampong Chilly
20Tangkai Cili Padi Kampong
1 Piece of Asam Keping Gelugor
1 Keping Asam Gelugor
Salt to Taste
Garam Secukup Rasa
500ml Fresh Coconut Milk
500gm Santan Segar


Preparation of Ingredient / Penyediaan Bahan2

In a pot boil water and add a pinch of salt. Then gently break the egg and cautiously put in the egg yolk into the pot. Let’s it hardened to a round or oval shape, net it out and keep aside to cool down.
Didalam periuk dengan air tahap mendidih dengan secubit garam, pecahkan telur dan masukan kedalam periuk berhati-hati. Setelah mengeras bulat atau bujur, angkat dan biarkan sejuk sebentar.
Thinly slice the gelugor shoot,in a bowl add in the sliced gelugor shoot and sprinkle with a bit of salt.   
Pucuk gelugor yang di hiris nipis masukan kedalam mangkuk dan taburkan dengan sedikit garam- boleh juga diramas jika pucuk gelugor agak tua atau rasa keras.
Using a stone mortar, pound chilly, turmeric with a bit of salt until fine.
Mengunakan Lesong batu, tumbuk cili api dan kunyit dengan secubit garam.


How To Cook? / Bagaimana memasaknya

In a wok add in all the pounds ingredients and the coconut gravy. Mix well the ingredient. Turn the heat to the lower level. Mix well for about 2-3 minutes
Mengunakan kuali, masukan semua bahan yang ditumbuk dan gaulkan hingga sebati. Kecil api pada paras rendah  dan gaul bahan itu sehingga sebati  selama 2-3 minit tanpa henti.
Add the Fresh Coconut Milk – stir the mix continuously, upon observing the first boil, add in the boiled egg for another 12-15minuts, turn the stove to lower heat level. Stir the mix on and off to prevent inconsistencies.
Masukan santan kelapa dan gaulkan dengan bahan yang sedia secara pelahan dengan terus dikacau lagi. Ini untuk mempastikan tidak berlaku ketulan2 santan atau berkepala. Yang boleh menyebabkab makanan tidak enak lagi
