Stir Fry Spanish Mackerel & Vege /Tenggiri Goreng & Sayur

Good day from Mcburn's Kampong Kitchen to all of you and get new recipe for you to try it at home. "Enjoy cooking and live life"
Ingredients/Bahan2

  •     1 Fresh Mackerel 0.5kg-1.0kg / 1 Ekor Ikan Tenggiri  Segar 0.5Kg – 1.0Kg
  •     100gm Leek / 100gm Daun Bawang Putih
  •     3 Rosette Potatoes / 3 Biji Kentang Rosette
  •     10 Dried Chillies / 10 Tangkai Cili Kering
  •     3 Red Chillies / 3 Tangkai Cili Merah
  •     1 Big Onion / 1 Biji Bawang Besar
  •     1 Red Carrot / 1 Biji Karot Merah
  •     2 Shallots / 2 Biji Bawang Kecil
  •     3 Cloves Garlic / 3 Ulas Bawang Putih
  •     50ml of Cooking Oil/ 100ml Minyak Masak
  •     1 Inch of Ginger / 1 inci Halia
  •     1 Tsp of Turmeric Powder / 1 Sudu Kecil serbuk kunyit
  •     1 Tsp Pepper Powder / 1 Sudu Kecil Serbuk Lada Hitam
  •     1 Tbsp of Light Black Soy Sauce / 1 Sudu Besar Kicap Soya Cair
  •     2 Tsp of Salt / 2 Sudu kecil garam

Preparation of Ingredients/Penyedian Bahan2

  1.  Slice the Mackerel about 1/2” thin slice/ Tenggiri di hiris nipis 1/2″
  2. In a bowl put in the sliced mackerel, add in Turmeric,Pepper,salt and light black soy sauce. Keep it aside for about 20 minutes to marinate / Masukan potongan tenggiri,serbuk kunyit,lada hitam,garam dan kicap soya cair dan diperap selama 20 minit.
  3. Potatoes and carrot cut to 1/2″ cube / Kentang & Karot dipotong dadu 1/2″
  4. Dried Red Chillies cut into halve/Cili Kering di potong 2
  5. Cut the leek to about 2″ length / Potong daun bawang putih sekitar 2″ panjang.
  6. Fresh Red Chillies,Big Onion, thinly slice / Lada Merah, Bawang Besar, di hiris nipis
  7.  Ginger,Garlic and Shallots to fine grind/Halia,Bawang putih dan Bawang Kecil di kisar halus.

How to Cook/Cara Memasak

  1. In a pre-heated frying pan with a medium add in the cooking oil to pan fry the marinated mackerel until golden brown on both side / Panaskan pan mengoreng dan masukan minyak masak, goreng tenggiri yang diperap dengan api serdehana.
  2. Keep the fried mackerel aside, with the remaining cooking oil in the frying pan put in the potato and carrot cube and fry for about 3-4 minutes to soften them. Add in the grind-ed ingredient and  then add in the cut dried chillies and stir fry for anothe 2-3 minutes / Setelah tenggiri digoreng asingkan, dengan minyak yang masih ada masukan dadu kentang dan karot, goreng sekitar 3-4 minit untuk melembutkannya. Masukan semua bahan yang dikisar kemudian masukan cili kering, goreng selama 3-4 minit lagi.
  3. In a low heat frying pan add in the pre-fried mackerel, slowly and gently stir all the combination for about 3-4 minutes then add in slice red chillies and randomly cut leek./ Di tahap api yang rendah,masuk ikan tenggiri yang siap digoreng dan hirisan cili merah dan daun bawang putih.
    Now ready to serve / Bolehlah dihidangkan.
